Medallions of Pork with Blackberry Fig Glaze

Ingredients:

•Crisco® Olive Oil No-Stick Cooking Spray
•2 (1 to 1 1/4 lb. each) boneless pork tenderloins
•Garlic powder
•Salt and pepper, to taste
•
BLACKBERRY FIG GLAZE
•1/2 cup Smucker's® Blackberry Syrup
•3 tablespoons balsamic vinegar
•3/4 teaspoon crushed rosemary
•1 1/2 teaspoons garlic powder
•3 tablespoons finely chopped California figs
•1 1/2 teaspoons fresh lemon juice

Directions:

1HEAT oven to 450°F. Spray a shallow 13x9-inch roasting pan with no-stick cooking spray. Season pork tenderloins generously with garlic powder, salt and pepper. Place in prepared pan.
2BAKE uncovered 30 minutes. Turn tenderloins over. Bake an additional 10 to 15 minutes or until thermometer inserted in thickest part reads 155°F or to desired doneness.
3TRANSFER tenderloins to cutting board. Cover with foil. Allow to rest 10 minutes. Prepare Blackberry Fig Glaze.
 BLACKBERRY FIG GLAZE
1COMBINE syrup, vinegar, rosemary, garlic powder, figs and lemon juice in a small microwave-safe bowl. Microwave on HIGH (100% power) 1 minute. Stir.
2SLICE tenderloin. Place on serving platter. Drizzle pork with glaze. Garnish with sprigs of fresh rosemary, if desired.
