Curried Apricot Vegetable Medley

Yield

YIELD: 6 servings

Ingredients:

•2 cups chicken or vegetable broth
•8 ounces (1/2 medium bunch) fresh broccoli spears
•8 ounces (1 1/2 cups) fresh cauliflowerets
•1/2 cup red bell pepper strips
•1/2 cup carrots, chopped
•1/4 pound fresh mushrooms, quartered
•1/4 cup plain yogurt
•1/4 cup Smucker's® Low Sugar™ Reduced Sugar Apricot Preserves
•1/2 teaspoon lemon juice
•1/4 teaspoon curry powder
•1/8 teaspoon salt

Directions:

1HEAT broth in large saucepan over medium high heat. Add broccoli, cauliflower, red pepper, carrots and mushrooms. Cover and cook until broccoli is crisp-tender, about 5 minutes. Drain.
2COMBINE remaining ingredients in small saucepan. Cook and stir until sauce is heated to serving temperature. Pour over vegetables.
TIPTry sauce cold as a fruit dip; stir together sauce ingredients and refrigerate. It's especially delicious with banana slices.
