Creamy Fruit Fluff

Yield

YIELD: 8 servings (1/2 c. each)

Ingredients:

•1 (8-oz.) can crushed pineapple in juice, undrained
•1 (.3-oz) package sugar free orange gelatin
•1 (.3-oz.) package sugar free lemon gelatin
•1 (12.75 oz.) jar Smucker's® Sugar Free Apricot Preserves
•1 (8 oz.) container sugar free frozen whipped topping, thawed

Directions:

1PLACE pineapple with juice in microwave-safe medium bowl. Microwave on HIGH for 1 minute. Add both flavors gelatin powder and stir for 1 minute or until dissolved. Chill 15 minutes.
2STIR in preserves. Fold in 2 cups whipped topping. Chill for 1 hour or until firm.
3SERVE in small custard cups topped with a dollop of whipped topping.

My 13 year old daughter was searching for sugar free recipes to make for her Grandfather's 77th Birthday and came across the Creamy Fruit Fluff recipe. We had 10 guests over for dinner and served this and the Blackberry Brownie Tort (also from Smuckers) for dessert. When we told everyone it was sugar free they could'nt believe it! After dinner we asked everyone which dessert they liked the best and it was unanimous -- everyone liked the Creamy Fruit Fluff the best! Its creamy, fluffy and fruity!! It reminds me of the tropics too!!! We're going to make it again and try using different fruits and gelatins. January 12, 2013
