Maple Teriyaki Pork

YIELD: 4 Servings

Ingredients:

•3/4 cup Smucker's® Sugar Free Breakfast Syrup
•1 teaspoon finely grated ginger
•1 teaspoon finely minced garlic
•4 teaspoons low sodium soy sauce
•Crisco® Olive Oil No-Stick Cooking Spray
•1 1/4 pounds pork tenderloin, cut into 1-inch cubes
•Salt and pepper
•1 cup sliced carrots
•1 (8.5 oz.) can pineapple tidbits in juice
•1 cup chopped green pepper
•Hot cooked rice

Directions:

1COMBINE breakfast syrup, ginger, garlic and soy sauce in small bowl to make teriyaki sauce; set aside.
2HEAT a large heavy skillet over medium-high heat; spray with no-stick cooking spray. Season meat with salt and pepper on both sides; add meat to pan. Cook until meat develops a rich brown crust, about 6 to 8 minutes. Add carrots and pineapple with juice; cook until carrots are crisp-tender.
3STIR in green pepper and teriyaki sauce, stirring constantly until ingredients are well coated. Serve immediately with hot cooked rice.
