Seared Salmon with Blackberry-Chipotle Glaze

Yield

YIELD: 4 servings

Ingredients:

•1/4 cup Smucker's® Blackberry Syrup
•1 teaspoon garlic powder
•1 teaspoon ground cumin
•1/4 teaspoon chipotle chili powder, or to taste
•Crisco® Original No-Stick Cooking Spray
•4 (4 oz.) salmon fillets, rinsed and patted dry
•Freshly chopped cilantro, if desired

Directions:

1MIX to combine blackberry syrup, garlic powder, cumin and chipotle powder in small microwave-safe bowl. Heat on HIGH (100% power) 1 minute. Stir.
2HEAT a grill pan or large nonstick skillet over medium heat. Season salmon fillets with salt and pepper. Spray pan with no-stick cooking spray. Cook fillets, skin side up, for 3 minutes. Turn fillets skin side down, cooking another 4 minutes.
3BASTE top of salmon with blackberry-chipotle glaze. Turn. Baste other side. Cook an additional minute or until fish flakes easily with a fork.
4SERVE drizzled with remaining glaze and garnished with fresh chopped cilantro, if desired.
