Cucumber Peanut Butter Bites

Ingredients:

•	1 English cucumber
•	3 tablespoons Smucker's® Natural Creamy Peanut Butter, stirred
•	2 tablespoons light mayonnaise
•	1 tablespoon chopped red bell pepper

Directions:

1	CUT portion of cucumber into eight 3/4-inch thick rounds. Remove centers with spoon or small melon ball scoop until thin layer of cucumber remains in bottom.
2	STIR together peanut butter and mayonnaise. Fill center of cucumbers with mixture using melon ball scoop. Top with pieces of red pepper.
