Apricot and Carmelized Onion Relish

PREP TIME: 10 min

COOK TIME: 30 min

Yield

YIELD: 1 cup

Ingredients:

•3 tablespoons Crisco® Pure Olive Oil
•4 cups thinly sliced sweet onion
•1/3 cup Smucker's® Simply Fruit® Apricot Spreadable Fruit
•1/4 cup golden raisins
•2 teaspoons apple cider vinegar
•2 teaspoons Dijon mustard
•2 tablespoons rosemary, chopped
•Salt and pepper to taste

Directions:

1HEAT oil in large skillet over medium heat. Add onions. Saute 5 minutes or until just beginning to soften. Reduce heat to low. Cook 25 minutes, stirring often, until onions turn golden. Remove from heat.
2STIR in spreadable fruit, raisins, vinegar, mustard and rosemary. Season with salt and pepper.
TIPServe with pulled pork, grilled chicken or as a sandwich condiment.
TIPRelish can be made ahead and chilled up to 3 days.
