Lemon- Apricot Marinade
1/2 cup Smucker's Apricot Preserves
1/4 cup pitted green olives, sliced into quarters
1 large lemon (about 3 tablespoons juice and 1 tablespoon
grated rind)
1 teaspoon freshly ground black pepper
1/4 teaspoon salt
Combine all ingredients in a small bowl and mix together.
Use a marinade for grilling shrimp, salmon, swordfish,
or chicken.
Makes six servings.
