Pancetta Shrimp with Peach Glaze

  • No-Stick Cooking Spray
  • 1 (3 oz.) package very thinly sliced pancetta
  • 24 large uncooked shrimp, peeled and deveined
  • Salt and pepper
  • 1/2 cup Smucker's® Peach Preserves


  • Step 1

    HEAT oven to 375°F. Coat 13 x 9-inch baking pan with no-stick cooking spray.

  • Step 2

    SEPARATE pancetta slices and gently cut or tear into 24 pieces. Wrap one piece of pancetta around each shrimp. Arrange shrimp in a single layer in prepared pan. Sprinkle generously with salt and pepper.

  • Step 3

    BAKE 8 minutes. Spoon preserves over shrimp. Bake an additional 2 to 5 minutes or until shrimp are opaque in center. Stir gently to coat evenly with preserves before serving.
