Filet Mignon with Berry Pan Sauce

Ingredients

  • 4 (6 to 8 oz.) filet mignon steaks
  • Salt and pepper
  • 1 tablespoon Vegetable Oil
  • 4 tablespoons Butter divided
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1/2 cup dry red wine
  • 1/4 cup Water
  • 1/4 cup Smucker's® Mosaics Strawberry Blackberry Fruit Spread
  • 1/8 teaspoon fresh thyme leaves

Directions

  • Step 1

    SEASON both sides of steaks generously with salt and pepper. Let stand at room temperature 30 minutes.

  • Step 2

    HEAT oil in large skillet over medium-high heat. Place steaks in skillet. Cook 4 minutes. Turn and cook an additional 4 to 7 minutes or until desired doneness. Remove from skillet. Cover with foil and let rest while preparing sauce.

  • Step 3

    ADD 3 tablespoons butter to pan drippings. Heat over medium-low heat. Stir in onion. Cook, stirring frequently, about 5 minutes or until onion is tender.

  • Step 4

    STIR in garlic; cook 30 seconds. Stir in wine and water. Bring to a boil over medium-high heat. Reduce heat to medium-low. Stir in fruit spread and thyme. Simmer 2 minutes or until sauce is slightly thickened. Stir in remaining 1 tablespoon butter until melted. Serve sauce over steaks.
