Savory Apricot Chicken with Vegetable Rice

  • 1 (5.6 oz.) envelope rice medley in a savory sauce with carrots & peas or your favorite variety
  • Additional ingredients to prepare rice medley per package directions
  • 1 tablespoon Vegetable Oil
  • 8 boneless skinless chicken thighs (1 1/4 lbs.)
  • 1 (12 oz.) jar Smucker's® Apricot Preserves
  • 1 (1 oz.) envelope dry onion soup mix
  • 1/4 cup Water


  • Step 1

    PREPARE rice medley according to package directions.

  • Step 2

    Meanwhile, HEAT oil in large skillet over medium-high heat. Add chicken thighs. Cook until golden brown on both sides. Remove chicken from skillet. Set aside.

  • Step 3

    COMBINE preserves, soup mix and water in same skillet. Bring to a boil, stirring frequently. Reduce heat to medium-low. Simmer 2 minutes.

  • Step 4

    RETURN chicken to skillet. Cover and simmer 8 to 10 minutes or until internal temperature reads at least 165°F. Serve over prepared rice medley.
