Strawberry-Mint Couscous

  • 1 (10 oz.) package original plain couscous
  • 2 cups chicken broth
  • 5 tablespoons extra virgin olive oil, divided
  • 1/2 teaspoon salt
  • 1/2 cup Smucker’s® Natural Strawberry Fruit Spread
  • 1/4 cup balsamic vinegar
  • 1 cup thinly sliced fresh strawberries
  • 2 tablespoons finely chopped fresh mint leaves
  • 1/2 cup crumbled feta cheese


  1. PREPARE couscous mix according to package directions, using chicken broth, 1 tablespoon olive oil and salt. Place in large bowl; fluff with fork.
  2. WHISK fruit spread, 1/4 cup olive oil and vinegar until blended. Pour over couscous. Stir until evenly blended. Cool at least 15 minutes.
  3. FOLD in strawberries and mint just before serving. Sprinkle with cheese.
